Slow cooker best practices
- Fill the slow cooker between half and two-thirds full for best results. Too little food dries out; too much may not cook evenly.
- Brown meat in a skillet before adding to the slow cooker for better flavor and color.
- Add dairy (cream, milk, cheese) in the last 30 minutes to prevent curdling.
- Keep the lid on throughout cooking. Every time you remove it, add 20-30 minutes to the cook time.
- Root vegetables take longer than meat in a slow cooker - place them at the bottom of the pot.

How do I convert oven cooking time to slow cooker time?
A recipe that takes 1-2 hours in the oven takes 6-8 hours on Low or 3-4 hours on High in a slow cooker. A recipe that takes 2-4 hours in the oven takes 8-10 hours on Low or 4-6 hours on High.
What is the difference between Low and High on a slow cooker?
Low setting reaches about 190-200 F (88-93 C) while High reaches about 280-300 F (138-149 C). Both reach the same endpoint temperature eventually, but High gets there faster. Low is better for tougher cuts of meat that need longer to break down collagen.
Can I convert any oven recipe to a slow cooker?
Most braises, stews, and casseroles convert well. Recipes that rely on dry heat for browning or crisping (like roasted vegetables or baked goods) do not convert well because slow cookers create a moist cooking environment.
Do I need to reduce liquid when using a slow cooker?
Yes. Slow cookers trap nearly all moisture. Reduce liquid quantities by about one-third to one-half compared to the oven recipe. The ingredients themselves release additional liquid during the long cooking process.
Is it safe to leave a slow cooker on all day while away?
Modern slow cookers are designed for this use. They draw very little power and maintain a safe cooking temperature. However, the USDA recommends ensuring meat reaches safe internal temperatures and avoiding leaving food in the slow cooker beyond the recommended cooking time.
