Thawing time formula

fridge hours = weight / 5 * fridge hours per 5 lb
fridge days = fridge hours / 24
cold-water minutes = weight * minutes per lb
cold-water hours = cold-water minutes / 60

Refrigerator thawing uses about 24 hours per 5 pounds; cold-water thawing uses about 30 minutes per pound and the water must be changed every 30 minutes. Both rates are editable.

Worked example: a 16 pound turkey

  • Refrigerator: 16 / 5 times 24 = 76.8 hours, about 3.2 days.
  • Cold water: 16 times 30 = 480 minutes, which is 8 hours.
  • That is 16 water changes at 30 minute intervals.
  • A cold-water-thawed turkey must be cooked immediately.
  • Never thaw a turkey on the counter at room temperature.
